Protein brownies can pack 10 to 15 grams of protein per square. Learn how to add protein powder without drying them out, for fudgy, high-protein brownies.
Ingredients
2/3 cup (about 60g) chocolate protein powder (casein or blend)
1/2 cup (65g) all-purpose or oat flour
1/2 cup (50g) cocoa powder
1/2 cup (125g) Greek yogurt
1/2 cup (125g) nut butter
1/3 cup (80ml) maple syrup or honey
2 large eggs
1/3 cup (80ml) milk
1 tsp vanilla extract
1/2 tsp baking powder
1/4 tsp salt
1/2 cup (85g) chocolate chips
Instructions
1
Heat the oven to 350°F (177°C) and line an 8x8-inch pan with parchment.
2
Whisk the eggs, Greek yogurt, nut butter, maple syrup, milk, and vanilla until smooth.
3
Add the protein powder, flour, cocoa, baking powder, and salt, and stir just until combined.
4
Fold in most of the chocolate chips. Spread in the pan and top with the rest.
5
Bake 20 to 24 minutes, until the edges are set but the center still looks slightly soft.
6
Cool fully in the pan before slicing, since they firm as they cool.
