Description
One can of black beans adds about 15 grams of fiber to your brownies (USDA). Make fudgy, flourless, gluten-free black bean brownies nobody will guess are healthy.
Ingredients
1 can (15 oz) black beans, drained and rinsed well
2 large eggs
1/3 cup (80ml) melted coconut oil or butter
1/2 cup (100g) sugar or 1/3 cup maple syrup
1/2 cup (50g) cocoa powder
1 tsp vanilla extract
1 tsp espresso powder (optional, deepens chocolate)
1/2 tsp baking powder
1/4 tsp salt
1/2 cup (85g) chocolate chips
Instructions

Heat the oven to 350°F (177°C) and line an 8x8-inch pan with parchment.

Blend the rinsed beans, eggs, oil, sweetener, and vanilla until completely smooth.

Add the cocoa, espresso powder, baking powder, and salt, and blend again until glossy.

Stir in most of the chocolate chips by hand. Spread in the pan and top with the rest.

Bake 26 to 30 minutes, until the edges are set and the center is just firm.

Cool completely in the pan before slicing, since they firm as they cool.
