The FDA says about 3 grams of oat beta-glucan daily can help lower heart-disease risk. Make soft, chewy oatmeal raisin cookies with plump raisins and warm spice.
Ingredients
1 cup (150g) raisins
3/4 cup (170g) unsalted butter, softened
1 cup (220g) packed brown sugar
1/4 cup (50g) granulated sugar
2 large eggs
2 tsp vanilla extract
1 1/2 cups (190g) all-purpose flour
1 tsp baking soda
1 1/2 tsp ground cinnamon
1/2 tsp salt
3 cups (270g) old-fashioned rolled oats
Instructions
1
Soak the raisins in warm water for 10 minutes, then drain well and pat dry.
2
Beat the butter, brown sugar, and granulated sugar until fluffy, about 2 minutes.
3
Mix in the eggs and vanilla until smooth.
4
In a separate bowl, whisk the flour, baking soda, cinnamon, and salt, then stir into the wet mixture.
5
Fold in the oats and drained raisins until evenly combined.
6
Chill the dough 30 minutes if you have time. Heat the oven to 350°F (177°C) and line sheets with parchment.
7
Scoop 2-tablespoon mounds, space 2 inches apart, and bake 10 to 12 minutes until the edges are set but centers look soft.
