Instructions

  1. Spread the macadamia nuts on a baking sheet and toast at 325°F (163°C) for 8 to 10 minutes until golden and fragrant. Cool completely, then roughly chop.
    This step keeps the nuts crunchy.
  2. Preheat the oven to 350°F (175°C) and line two baking sheets with parchment.
  3. Beat the butter, brown sugar, and granulated sugar for 2 to 3 minutes until light and fluffy.
  4. Beat in the eggs one at a time, then the vanilla, until just combined.
  5. Whisk the flour, cornstarch, baking soda, and salt together in a separate bowl.
  6. Fold the dry ingredients into the wet mixture, then fold in the white chocolate chips and cooled toasted macadamia nuts.
  7. Rest the dough 30 minutes to 2 hours in the refrigerator.
  8. Scoop 2 to 3 tablespoon portions onto the prepared sheets.
  9. Bake 11 to 13 minutes, until edges are golden and centers still look pale and soft.
  10. Cool on the baking sheet for 5 minutes, then transfer to a wire rack.
