Description
Cream of tartar is the secret to a real snickerdoodle: tang, chew, and a crackly top. Make soft snickerdoodles that stay chewy for days.
Ingredients
1 cup (226g) unsalted butter, softened
1 1/2 cups (300g) granulated sugar
2 large eggs
1 tsp vanilla extract
2 3/4 cups (345g) all-purpose flour
2 tsp cream of tartar
1 tsp baking soda
1/2 tsp salt
For the coating
1/4 cup (50g) granulated sugar
1 tbsp ground cinnamon

Beat the butter and sugar until light and fluffy, about 2 minutes. Mix in the eggs and vanilla.

In a separate bowl, whisk the flour, cream of tartar, baking soda, and salt.

Stir the dry mix into the wet until a soft dough forms. Chill 30 minutes if the dough feels sticky.

Heat the oven to 350°F (177°C) and line sheets with parchment.

Stir the coating sugar and cinnamon together in a small bowl.

Roll the dough into 1.5-tablespoon balls, roll each fully in cinnamon sugar, and space 2 inches apart.

Bake 9 to 11 minutes, until the tops are set and crackled but the centers still look soft. Cool on the sheet 5 minutes, then move to a rack.
