Ingredients
6 cups (about 6 medium) firm tart apples, peeled and sliced
1/2 cup (100g) granulated sugar
1/4 cup (55g) packed brown sugar
2 tbsp cornstarch
1 tsp ground cinnamon
1/4 tsp ground nutmeg
1/4 cup (60ml) water or apple juice
1 tbsp lemon juice
Pinch of salt

Toss the sliced apples with the lemon juice and set aside.

In a large pot, whisk the sugars, cornstarch, cinnamon, nutmeg, and salt with the water until smooth.

Add the apples and cook over medium heat, stirring, until the mixture bubbles and thickens, about 6 to 8 minutes.

Cook just until the apples are barely tender, then remove from the heat.

Cool completely before using in a pie, freezing, or storing. The sauce thickens as it cools.
