Little Debbie launched Cosmic Brownies in 1999, and they turned 25 in 2024. Make a fudgy copycat version with ganache frosting and rainbow candy chips.
Ingredients
Brownie base
1/2 cup (113g) unsalted butter
6 oz (170g) semisweet chocolate, chopped
1 cup (200g) granulated sugar
2 large eggs plus 1 yolk
1 tsp vanilla extract
3/4 cup (95g) all-purpose flour
1/3 cup (30g) cocoa powder
1/2 tsp salt
Ganache topping
6 oz (170g) semisweet chocolate, chopped
1/2 cup (120ml) heavy cream
1 tbsp corn syrup (for shine)
1/3 cup rainbow candy-coated chocolate chips

Heat the oven to 350°F (177°C) and line an 8x8-inch pan with parchment.

Melt the butter and chocolate together until smooth, then whisk in the sugar.

Beat in the eggs, yolk, and vanilla until glossy.

Fold in the flour, cocoa, and salt just until combined. Spread in the pan.

Bake 22 to 26 minutes, until a toothpick shows moist crumbs. Cool completely.

For the ganache, heat the cream, pour it over the chocolate, add corn syrup, and stir smooth.

Spread the ganache over the cooled brownies, scatter the rainbow chips, and let set 1 hour before slicing.
