Key lime pie became Florida's official state pie in 2006. Make an authentic version with real key lime juice, sweetened condensed milk, and a graham crust.
Ingredients
Crust
1 1/2 cups (150g) graham cracker crumbs
1/3 cup (67g) granulated sugar
6 tbsp (85g) unsalted butter, melted
Filling
4 large egg yolks
1 can (14 oz) sweetened condensed milk
1/2 cup (120ml) key lime juice
1 tbsp key lime zest

Heat the oven to 350°F (177°C). Mix the crust ingredients and press into a 9-inch pie plate.

Bake the crust 8 minutes, then cool slightly while you make the filling.

Whisk the egg yolks and lime zest for 1 minute, then whisk in the condensed milk.

Slowly whisk in the key lime juice until smooth and slightly thickened.

Pour the filling into the crust and bake 15 minutes, until the center is just set with a slight jiggle.

Cool, then chill at least 3 hours before topping with whipped cream and slicing.
