Ingredients
For the Filling
3medium (about 3 cups) apples, peeled and finely diced (Granny Smith or Honeycrisp)
1/3cup granulated sugar
2tbsp light brown sugar
1tbsp cornstarch (mixed with 1 tbsp cold water)
1tsp ground cinnamon
1/4tsp ground nutmeg
1tbsp lemon juice
For the Crust
2rounds, chilled pie crust (double crust, store-bought or homemade)
1large egg, beaten (for egg wash)
1tbsp coarse or turbinado sugar (for topping)
Instructions

Combine the diced apples, sugars, and lemon juice in a saucepan over medium heat. Cook 8 to 10 minutes until the apples soften and release their juice.

Stir the cornstarch into 1 tablespoon of cold water, add to the pan, and cook 1 to 2 more minutes until glossy and thickened.

Spread the filling on a plate and refrigerate at least 30 minutes to cool completely.
This step prevents soggy crust.

Preheat the oven to 375°F (190°C), line two baking sheets with parchment, and cut the pie crust into 3-inch rounds.

Spoon a small amount of cooled filling onto half the rounds, leaving a clear border.

Top with a second round and crimp the edges firmly with a fork.

Cut a small slit in the top of each, brush with egg wash, and sprinkle with coarse sugar.

Bake 18 to 20 minutes, until deeply golden all over.
