Description

National Vanilla Cupcake Day is November 10. Make bakery-style vanilla cupcakes with a soft, fluffy crumb, flat tops for frosting, and real vanilla flavor.

Ingredients

1 1/2 cups (180g) cake flour (or all-purpose)
1 1/2 tsp baking powder
1/4 tsp salt
1/2 cup (113g) unsalted butter, softened
1 cup (200g) granulated sugar
2 large eggs, room temperature
1 tbsp vanilla extract
1/2 cup (120ml) buttermilk, room temperature

Instructions

Heat the oven to 350°F (175°C) and line a 12-cup pan with liners.
Whisk the flour, baking powder, and salt in a bowl.
Beat the butter and sugar until pale and fluffy, about 3 minutes.
Beat in the eggs one at a time, then the vanilla.
Add the dry mix and buttermilk alternately, starting and ending with dry, mixing until just combined.
Fill the liners two-thirds full and bake 18 to 20 minutes, until a pick comes out clean. Cool fully before frosting.
